Ingredients (serves 4)

  • 1 whole bunch organic celery
  • 1 large organic onion
  • 1 large potato (or sweet potato)
  • 750ml vegetable stock
  • 250ml filtered water
  • Splash of cream or almond milk (optional)

Method

Use a whole bunch of organic celery,

Wash and chop.

Add to blender with 250 ml of filtered water and blend to a fine consistency.

Meanwhile chop up a large potato.

Put 750 ml of water with vegetable stock in a large pot.

Bring to boil and add the potato.

Once the other ingredients are blended add them to the boiling stock, bring back to the boil.

Then simmer for 20 minutes
